Is your product rolling up the entrance hopper and not flowing freely? Does it look pale and dead? Shattered plates causing production down times? If you have answered “Yes” to any of the above, it is evident that these simple concerns are due to equipment misuse and poor tool maintenance.
Grinder plate and knife failures are a common cause for equipment breakdowns, the vast majority of these causes are due to blunt tools, excessive pressure, or no lubricated wear. The problem with this…. . “The quality of the finished product, poor definition, over cooked, ruined product.”
Every skilled butcher knows that sharp hand tools are part of his trade requirements; this philosophy is also true for a meat grinder/mincer, it is a critical part of any operation. The grinder/mincer plates and knives need to be resharpened on a regular basis, and you cannot resharpen enough. Knives and plates should be inspected regularly and replaced when they show signs of cracks, defects, and fall below the proper safety thickness.
