Every skilled butcher knows that sharp hand tools are part of his trade requirements; this philosophy is also true for a meat grinder/mincer, it is a critical part of any operation.  The grinder/mincer plates and knives need to be resharpened on a regular basis, and you cannot resharpen enough.  Knives and plates should be inspected regularly and replaced when they show signs of cracks, defects, and fall below the proper safety thickness.
